In the images below you can see the problem I am having with the shoulders of my character when I raise my arms; the shoulders don't rotate with the arms. I have tried both rotation types Yaw-Pitch and From-To. The shoulder rotation weight is set to 1. Can I try something else to have a more natural looking connection between shoulders and arm? Should I take something into account with my rigging?

This can happen with some models, might be just a skinning issue, but you could try going to IKSolverVRArm.cs, in it you'll find:

private const float yawOffsetAngle = 45f;

private const float pitchOffsetAngle = -30f;

Make both public so you could tweak them in Editor while in play mode and see if other values work better with that model.
